2021 Notary Public Cabernet Franc, Curtis Vineyard, Santa Ynez Valley 

Our first carbonic style Cab Franc comes from the Curtis Vineyards on the Western edge of Santa  Ynez Valley where the cool afternoon breeze stretches the ripening period. Sustainable farming,  low yields and well drained gravely loam soils contribute to exceptionaly well balanced fruit.  

All the fruit was picked in the early morning hours, dumper whole cluster into 1.5 ton fermenters  under a CO2 blanket. Fermenter were sealed off and periodically gassed until fermentation was  initiated naturally. Minimal foot stomping took place to get the full carbonic effect. The resulting  wine was aged for 8 months on the lees. Serve chilled!

2022 Grenache Rosé, Santa Barabara County 

Our Santa Barbara County Rosé hails Watch Hill in the cooler North Western corner of Santa  Barbara County close to the town of Los Alamos. Organic farming, low yields and a moderate  growing season yielded fruit with exceptional balance and depth.  

The fruit was picked in the early morning hours, destemmed and left overnight to pick up color  and flavor. It was then pressed and fermented cold in stainless steel. The wine was aged on the  lees for 5 months to build texture and mouth feel. Minimal intervention winemaking was used to  bring out the most from these sites and capture the essence of Santa Barbara County.

100% Watch Hill Vineyard 

2023 Albariño, Santa Barbara County 

The fruit was sourced from North Canyon Vineyard which is situated along the Santa Maria river bench in  a secluded canyon. It’s less than twenty miles from the Pacific Ocean, making it close to the cool coastal  influence. The fruit was picked by hand at night to preserve freshness. Fermentation took place in a  combination of stainless steel and 227 liter french oak barrels. Aging was on the lees for 6 months. 

Citrus zest, nectarine and honeysuckle dominate the nose with hints of fresh pineapple. The palate is  refreshing with quenching citrus flavors. Everything is held together with a firm and refreshing acid.

2018 Notary Public Cabernet Sauvignon, Santa Ynez Valley 

Our Santa Ynez Valley Cabernet Sauvignon is built around Arroyo Perdido Vineyard in the heart of  Santa Ynez Valley which was planted in seventies on sandy loam soils. The vineyard is situated on  the cooler North-Eastern corner of Santa Ynez. Our goal is to make a wine that takes us back to a  more classic style that captures vintage and site within the Santa Ynez Valley.  

All the fruit was picked in the early morning hours, destemmed and left to cold soak for up to 6  days. Maceration on the skins lasted between 14 and 21 days after which the wine was pressed to  tank and transferred to barrel for aging. The wine was aged in mostly neutral oak for 18 months.
